Alcohol: 5.8% v/v (4.6% w/w)
Water: Tap water with 1 TBS 5.2 mash stabilizer, 1 tsp gypsum.
Grain: 6 lb. American 2-row
3 lb. Wheat malt
8 oz. American crystal 60L
Mash: 80% efficiency
1.3 qt per pound at 153F for 60 min. Raise temp to 170F and hold for 10 min. Continuous sparge with 170F water to reach 7.5 gal.
Boil: 60 minutes SG 1.038 7.5 gallons
1 tsp Irish Moss last 15 minutes.
Hops: 1 oz. Tettnanger (4.5% AA, 60 min.)
.25 oz. Cascade (6% AA, 15 min.)
.25 oz. Willamette (5% AA, 15 min.)
Yeast: White Labs 001 or Wyeast 1056 in a 1 qt starter.
Log: Primary 7-10 days at 65F. Add 3 oz apricot flavoring at transfer to secondary. Secondary 10-14 days at 65F.
Carbonation: Keg and force carbonate.
