Grain: 2 lb. American crystal 20L
1 lb. Flaked oats
2 lb. Flaked wheat
Steep: Steep wheat, oats & crystal Malt in 2 gal water at 155° for 30 min and sparge with 168° water
Boil: 60 minutes SG 1.211 3 gallons
1 lb. Light malt extract
12 lb. Wheat extract
2 lb. Honey
1 tbsp Irish moss (15 min)
2 oz crushed coriander seed (15 min)
2 tsp cinnamon (10 min)
1 tsp nutmeg (10 min)
Zest of 6 oranges (10 min)
2 tsp vanilla (55 min)
Hops: 4 oz. Kent Goldings (5% AA, 60 min.)
2 oz. Willamette (aroma)
Yeast: Belgian white beer ale yeast
Log: Primary fermentation in 10 gal carboy for 7 days
Secondary in two five gal carboys for 10 days
Transfered to Kegs and carbonated
Carbonation: 2.6 volumes Keg: 21.6 psi @ 55°F
