Steep: | Steeped the speciality grains before the boil. Added lot's of whole cloves, I used powdered ginger, powdered cinnamon, dyhydrated orange peel, powdered nutmeg (very little) & vanilla extract. | |||||||

Added 4oz maltodextrin, extract, & brown sugar before the boil. Then added irish moss at last 10 minutes. | ||||||||

Tasting: | 10/13/03 This beer after 4 days fermentation tatses good! and strong! The spices remind me of pumpkin pie. Final gravity was 1.020 making a nice 6.4% beer. It's a little hazy, I think from the powdered crap? or maltodextrin? 10/18/03 after sitting again for 5 days the stuff settled and man, this stuff is already getting better. The spices have mellowed a bit, but the alcohol comes through. I can't wait until it's aged/conditioned and has carbonation. This will probably be good for the Halloween party! (in 2 weeks) |
