Houseboat Heaven

This is an Amber Honey Ale made for our houseboat trip in summer of 2013

Beer: Houseboat Heaven Style: American Amber Honey Ale
Type: Extract w/grain Size: 5.3 gallons
Color:
18 HCU (~11 SRM)
Bitterness: 22 IBU
OG: 1.074 FG: 1.011
Alcohol: 8.1% v/v (6.3% w/w)
Water: I used watermill express water that was RO treated
Grain: 1.00 lb. Honey Malt 15L
1.00 lb. American crystal 40L
Steep: The graines were steeped in 5 Gallons of water in two sacs that were slowly brought up to 150deg and then sat all night (it was late so I did not start the boil till the next day) The next morning I brought it up to 180Deg then removed the grain sacs and started adding the extract for the boil.
Boil: 60 minutes SG 1.066 5.9 gallons
5 lb. Light malt extract
1.5 lb. Light dry malt extract
2.6 lb. Honey
Irish Moss used at 15 min then 3 oz of oak chips/blocks added in the last 30 seconds ( I first boiled them in a seperate small pan of water to remove some of the bitter tannans. Last time I did not and the beer was so bitter and not a hopp bitter)
Hops: .75 oz. Cascade (7.3% AA, 60 min.)
.25 oz. Cascade (7.3% AA, 10 min.)
1 oz. Willamette (4.9% AA, 10 min.)
1 oz. Cascade (aroma)
Yeast: I used Wyeast 1056 I had one smack pack that was 2 years old and a new one of only 3 months old
Log: Brewed on 6-2-2013. It was warm in the house as my AC was broke for the first week and it was around 85 deg in the house in the day.
Racked to secondary on 6-24-2013 SG was now 1.011. Tastes good just needs to mellow for a few weeks in secondary before kegging.
Carbonation: 3.0 volumes Keg: 14.7 psi @ 35°F
Tasting: I will add more tasting notes after it is finnished.
