High Seas Caribbean Ale

My initial attempt to make a Mexican type cerveza for my wife. For my wife's taste, a little too much hop flavor and aroma and not enough carbonation. Will try again.

Beer: High Seas Caribbean Ale Style: Cream Ale
Type: Extract Size: 3 gallons
Color:
3 HCU (~3 SRM)
Bitterness: 10 IBU
OG: 1.054 FG: 1.010
Alcohol: 5.7% v/v (4.5% w/w)
Water: Instead of using 3 gallons of water, used 3 gallons of leftover flat Sprite from a party. The corn sugar listed in the recipe can be omitted if Sprite is used instead of water. Lemon/Lime flavor of Sprite added nicely to the overall flavor of the beer.
Boil: 20-25 minutes SG 1.054 3 gallons
1.5 lb. Light malt extract
1 lb. Rice extract
2.00 lb. Corn sugar
1Tbsp. Irish Moss for clarifying
Hops: .33 oz. Cascade (6% AA, 20 min.)
.33 oz. Cascade (6% AA, 5 min.)
.33 oz. Tettnanger (4.5% AA, 5 min.)
.167 oz. Cascade (aroma)
.5 oz. Tettnanger (aroma)
Log: Time in primary fermenter was 3 weeks @ 75F. Did not rack into secondary. Racked into bottling bucket, added heaping 1/2 cup priming corn sugar with a small amount of yeast for bottling.
Carbonation: Naturally carbonated nicely using heaping 1/2 cup sugar.
Tasting: High hop flavor. Will adjust to lower hoppiness by reducing the amount of finishing and aromatic hops.
