Apple Pie Ale
I wanted to put my favorite pie in a bottle. Please, if you try it, let me know what you think.

Water: | I used water from Savemart, the purified $.39/gallon stuff. I wanted to keep this beer a little hazy and thick, sort of filling, so I left out gypsum, Irish moss, etc. | |||||||
Grain: | 8 oz. Belgian biscuit 8 oz. British amber 4 oz. Special Roast 50L |

Steep: | Put grains in a grain bag and put in cold water. Bring to 160°F and hold for 30 minutes. Discard and bring to a boil | |||||||
Boil: | 60 minutes | SG 1.139 | 2.5 gallons | |||||
3.3 lb. Light malt extract 3.3 lb. Amber malt extract 2 lb. Brown sugar |

Add 1oz Cascade, 1 stick of cinnamon, 8 cloves, at beginning of boil. Add 1 oz Kent Goldings with 5 minutes left. | ||||||||
Hops: | 1 oz. Cascade (6% AA, 60 min.) 1 oz. Kent Goldings (5% AA, 5 min.) |

Yeast: | White Labs European Ale WL011 at 75°F | |||||||
Carbonation: | 3oz Corn Sugar at bottling. Also add 4oz Apple extract at bottling. | |||||||
Tasting: | Apple and spice flavors are perfect, blend well. High maltiness with a subtle bite of hop flavor. Very biscuity, I was going for a kind of pie crust feel, the whole 9 yards. :) Enjoy and let me know what you think! |
