irish moss,yeast nutrients & maple syrup last 15 min of boil
Hops: 1.60 oz. Perle (8% AA, 60 min.)
1.60 oz. Cascade (6% AA, 45 min.)
0.79 oz. Hallertauer Mittelfruh (5% AA, 30 min.)
0.79 oz. Saaz (3.75% AA, 30 min.)
0.54 oz. Cascade (6% AA, 15 min.)

Yeast: 5 gal on 1056 yest cake from pale ale,5 gal on pacman yeast cake from
pale ale. ferment 6 weeks rack 5-7 gal into various carboys
for wood aging/bourbon wood aging remember to leave some plain for blending. at bottling blend to taste add corn sugar and pitch 1
smack-pac wyeast 1728 and bottle condition for one year!!!
