Rocky Mountain Sahti

The is Sahti, a Finnish brew of malted barley, rye, or wheat, strained through juniper boughs. My version is all-grain and I think most like what was probably done years ago. It's an easy all-grain brew as there is no boiling!

17 HCU (~11 SRM)
Bitterness: 0 IBU
OG: 1.073 FG: 1.008
Alcohol: 8.4% v/v (6.6% w/w)
Water: None, used local Logan, Utah, city water.
Grain: 5 lb. Wheat malt
10 lb. American 2-row
1 lb. British brown
.5 oz. Roasted barley
Mash: 80% efficiency
Mashed in at 132, then slowly heated over 1.5 hours to 160 oops, and cooled to 155 with additional water. Rested for 1 hour. Heated to 170 in about 15 minutes.
Boil: 0 minutes SG 1.073 6.5 gallons
Hops:
Yeast: Wyeast: 3068 Weihenstephan Weizen added after cooling outside for 6 hours.
Log: Strained though juniper boughs, obtained locally. A mix of Rocky Mountain and Utah Juniper. Enough to fill the bottom of the sparging vessel for a few inches. Also had my strainer in there. I rinsed but did not boil or sanitize these. Sparged with 160F water for about 1 hour. Sparged last few gallons with 170F water for another 15 minutes.
OG 1.062 (lower than expected) Never got a final.

Drank most as draft or quickly bottled (bottled while still in the 1st ferment in flip-tops or growlers for a couple days). As is aged it got sour. Did not bottle - I left it too long and the air-lock got knocked off and it was 'fruit-flyed'.
Tasting: This tasted like camping was what one taster said. It had strong juniper flavor and aroma, but to me not overwhelming. Very refreshing. There were some who just could not stand the juniper and really hated it. I liked it, though probably not a favorite, though I will make it again.
