Cook rice before mash begins. Dough in with 85C° H20 temp about 62C°. add some cold H2O temp 55C° Hold 15 min. Add in rice. Temp about 60C° Hold about 30 min. Added more sparge H20 but didn't really bring it up. Took about 2 gallons of runoff and brought it into a boil and put it back into the mash. Temp 66C°. Hold about 1 hour. start Sparge. Collect runnings, but they never really got to clean. |
