This is a first time trial run. Looking to simmulate mikes hard lemonaid.

2.00 lb. Light dry malt extract 4.03 lb. Corn sugar 2.99 lb. Honey 6.04 lb. 3 quarts lemon juice concentrate |

Boil the light dme with the 3 quarts of lemon juice concetrate for the full 60 min. Add the cane sugar last 10 min or so, and the honey only after the heat is off. Be sure to boil the lemon juice concentrate for it does have preservatives that can harm the yeast. | ||||||||
Hops: | 1.02 oz. Cascade (6% AA, 60 min.) 1.02 oz. Cascade (6% AA, 15 min.) |

Yeast: | champaign yeast, make a starter with 1/4 cup of corn syrup ond 3/4 cup of water. Do this at least 3 hours prior to pitch. | |||||||
Log: | I plan to use a non fermentable wine sweetner to flavor to taste prior to bottles. | |||||||
Carbonation: | I have no intentions of carbonating this batch. Maybee next time who knows. | |||||||
Tasting: | You should fully expect this to be very dry with a high % of alch. This is where the non fermentable wine sweetner will help out. |
