Yeast: | White Labs WLP002 from an active 750ml starter. | |||||||
Log: | Brewed January 8, 2005. Total time: 5 hours. Primary fermentation: 6 days between 68F and 70F. As fermentation slowed and gravity was still high (1.022), racked to secondary and added rehydrated Danstar Nottingham dry yeast and 1 crushed beano tablet. Fermentation started back up on day 7, approximately 6 bubbles per second. Secondary: TBD |

Carbonation: | Primary: Tasted great at 1.016, though a little sweet. Very smooth and mild, not bitter. Slight carmel overtones. Once this gets to 1.010-1.012, I plan to crash chill it. |
