Alcohol: 6.1% v/v (4.8% w/w)
Water: Brita filtered tap water
Grain: 8 oz. American crystal 10L
8 oz. British crystal 50-60L
Steep: Steeped grains at 155° for 40 minutes then sparged with 180° water
Boil: 60 minutes SG 1.089 3.5 gallons
6 lb. Light malt extract
1 lb. Light dry malt extract
12 oz. Honey
1 tablespoon Irish moss for 15 minutes
1 tablespoon Lemon zest for 15 minutes
Hops: 1 oz. Willamette (5% AA, 60 min.)
1 oz. Kent Goldings (aroma)
Yeast: Wyeast 1098 British Ale
Carbonation: primed with 4 oz corn sugar
Tasting: one of my favorite beers
