Meek and Mild

This is a first attempt at this recipe, modified from a recipe from a book, partly by mis-reading quantities and partly by not having all of the ingredients. Hoping for a dark sweet slightly chocolatey flavour.

Beer: Meek and Mild Style: English Dark Mild
Type: Extract w/grain Size: 5 Imp. gal.
Color:
67 HCU (~27 SRM)
Bitterness: 29 IBU
OG: 1.048 FG: 1.008
Alcohol: 5.1% v/v (4.0% w/w)
Water: We use a fit-to-tap carbon filter for all liquor and even for some cleaning applications. The liquor is heated pure, prior to any malt extract or grains beeing added to evaporate any remaining chlorine from our tap water
Grain: 280g British crystal 50-60L
280g British black patent
250g Flaked wheat
Steep: Bring water in boiler to 68°, add all grains in grain bags hanging in liquor from a long arm spoon over the boiler. Keep the lid on to prevent a large temperature drop. Swill the bags around every two minutes or so, and after 30 mins, squeeze the bags dry.
Boil: 90 minutes SG 1.048 5 Imp. gal.
3.2kg Light malt extract
Hops: 25.0g Fuggles (4.75% AA, 90 min.)
25.0g Kent Goldings (5% AA, 90 min.)
10.2g Fuggles (4.75% AA, 15 min.)
10.1g Kent Goldings (5% AA, 15 min.)
Yeast: Regular dry-ale yeast. Nothing special. Tried without a starter, and it goes like the clappers. No worries.
