Adjusted ph to 5.4 with 1t Gypsum.
Adjusted sparge (3.5 gal) to 5.3 ph with Lactic Acid
Collected 4.8 gal of runoff
Boil: 90 minutes SG 1.031 6.5 gallons
4 oz. Corn sugar
Topped boil pot to 6.5 gal by adding 2.75 gal spring water.
1t Irish moss added at 15 min
volume after boil (5.75 gal.)
Hops: .75 oz. Kent Goldings (4.4% AA, 60 min.)
.5 oz. Kent Goldings (4.4% AA, 15 min.)
Yeast: 1Qt started Wyeast London Ale 1028

Tasting: This came out great. Nice malty and very slightly sweet taste. Great for summer, light but flavorful. Best served at 55.
