Uncle Malty

Beer: Uncle Malty Style: American Brown
Type: Extract w/grain Size: 6 gallons
Color:
28 HCU (~15 SRM)
Bitterness: 6 IBU
OG: 1.047 FG: 1.010
Alcohol: 4.8% v/v (3.8% w/w)
Water: Our tap water is just fine here, with a filter of course.
Grain: .5 lb. Wheat malt
.5 lb. Rye (raw)
Steep: Steep grain up to boil, turn off heat, at 40 minutes, turn on low flame until simmer, remove grains, sparge with 170° water.
Boil: 1|15 minutes SG 1.189 1.5 gallons
3.5 lb. Amber malt extract
1.5 lb. Light dry malt extract
1.5 lb. Dark dry malt extract
Irish moss last 15 minutes of boil.
Hops: 1 oz. Cascade (6% AA, 60 min.)
.25 oz. Fuggles (4.75% AA, 45 min.)
.25 oz. Fuggles (4.75% AA, 15 min.)
.5 oz. Fuggles (aroma)
Yeast: Liquid English Ale yeast.
Log: Add yeast when temp. has reached 76°. Try to keep below 78° for 7-10 days.(hard to do in July in Georgia!) Transfer to secondary, let clear for 7-10 days. I always keg 4.5 gallons and bottle a few for the future.
Carbonation: Forced at 30psi, dispense at 7psi
Tasting: I just love malt flavour. Some hops are good, just call me Uncle Malty!
