Reeds sugar shack red

This beer is one that I brew every spring, after a visit to my family members the [Reeds ]in upstate N.Y.. they sugar maple syrup and it"s the best, a great red color. good syrup makes this beer smooth.

40 HCU (~19 SRM)
Bitterness: 20 IBU
OG: 1.074 FG: 1.019
Alcohol: 7.1% v/v (5.6% w/w)
Water: 2 tsps.gypsum in mash water
Grain: 8 lb. British pale
1 lb. Dextrine malt (Cara-Pils)
1.5 lb. British crystal 95-115L
1 oz. American chocolate
Mash: 80% efficiency
mash @155 deg. for 70 mins raise temp to 168 for 20mins. sparge out @170 deg. with 5 gals.
Boil: 70mins. minutes SG 1.062 6 gallons
2 lb. Maple syrup
add the maple syrup with your Irish moss when you have about 15 mins left in the boil.
Hops: 1 oz. Fuggles (4.75% AA, 60 min.)
1 oz. Saaz (3.75% AA, 15 min.)
Yeast: white laps WLP009 Australian ale
