Grain: 20 lb. German Pilsner
2 lb. American crystal 20L
1 lb. Dextrine malt (Cara-Pils)
6 lb. Flaked corn
2 lb. German Munich
Mash: 80% efficiency
Dough in at 140
Very slowly raise to 152 - hold till conversion is complete
Mash Out 170
Boil: 90 minutes SG 1.070 13.5 gallons
Add bittering and flavoring hops as specified.
Add Irish Moss 15 minutes before end of boil.
In separate pot bring 3 gallons water to boil. Allow to cool. When it has cooled to between 170-150 add remaining Mt. Hood Hops in a strainer bag. Add hop tea to primary to fill balance of 16 gallons.
Hops: 1 oz. Chinook (10.5% AA, 60 min.)
2 oz. Chinook (10.5% AA, 45 min.)
1 oz. Chinook (10.5% AA, 15 min.)
1 oz. Mt. Hood (3.5% AA, 15 min.)
1 oz. Mt. Hood (aroma)
Yeast: American lager
Log: Cool wort to less that 65 deg. before pitching.
Primary ferment at 52 deg.
Secondary ferment at 45 deg.
Rack and age 1 - 2 months at 36 deg.
Carbonation: 2.6 volumes Keg: 10.7 psi @ 35°F
Cool aged lager to 32 deg. filter and force carbonate.
Allow to rest at room temp for two weeks then chill and serve.
Tasting: Excellent!
