Alcohol: 4.3% v/v (3.4% w/w)
Water: All brewing water is filtered.
Grain: 16.5 lb. British pale
1 lb. Flaked corn
2 lb. Rice (raw)
Mash: 82% efficiency
Boil 2 lbs. rice for 30 min. to gelatinize.
Heat 4.75 gal. water to 136°F. Add grist/hold for 30 min.
Add corn and rice to grist
Heat 2.33 gal. water to 212°F add to grist / hold 60 min.@ 152°F.
Mash out at 168°F./Sparge with 9.5 gal. water
Boil: 90 minutes SG 1.045 13.5 gallons
Add 1 tsp. Irish Moss with last Hop addition.
Hops: .5 oz. Saaz (2.8% AA, 60 min.)
1 oz. Willamette (5.4% AA, 60 min.)
0.5 oz. Cascade (5.5% AA, 15 min.)
1.5 oz. Saaz (2.8% AA, 15 min.)
Yeast: Wyeast Czech pils slurry.
Carbonation: This beer will be force carbonated.
