This is a Pre-prohibition Pilsner copy using an extract grain method for us small-timers. Use the steam yeast to stay in style. Ferment in the 50's F to keep beer clean (no esters).

.3 lb. Flaked corn
Steep: Steep Grains at 155 degrees for 20 minutes
Boil: 65 minutes SG 1.168 2.0 gallons
6.6 lb. Light malt extract
1.7 lb. Light dry malt extract
Irish Moss (15 minutes)
Hops: 1.5 oz. Hallertauer Hersbrucker (5.8% AA, 60 min.)
1 oz. Hallertauer Hersbrucker (5.8% AA, 45 min.)
1 oz. Crystal (3.5% AA, 15 min.)
0.5 oz. Crystal (aroma)
Yeast: White Labs Steam Lager Yeast (Make a starter)
Log: (planned) Brewed 3/28/03
(planned) Ferment temp: 50-55 F
(plannned)Racked after two weeks Lagered at 35 F
Carbonation: 3/4 cup sugar (or more to offset corn sweet flavor)
