Based off of "I'll Be (Weizen)Bock". A strong Weizenbock for the cold months.

Alcohol: 7.4% v/v (5.8% w/w)
Water: Five Star 5.2 in all brewing water to stabilize Ph at 5.2. 1 crushed campden tablet per 10 gallons of water to remove chlorine and chloromine.
Grain: 6 lb. British Pilsner (all I had)
8 lb. Wheat malt
4 lb. German Munich
8 oz. Dextrine malt (Cara-Pils)
4 oz. Belgian chocolate
Mash: 60% efficiency
HERMS
1.25 quarts per pound of grain.
60 minutes at 150F
15 minutes at 170F

Sparge with 175F water until 7 gallons of sweet wort is collected.
Boil: 60 minutes SG 1.059 7 gallons
Hops: .5 oz. Tettnanger (whole) (4.5% AA, 60 min.)
.25 oz. Tettnanger (whole) (4.5% AA, 30 min.)
.25 oz. Tettnanger (whole) (4.5% AA, 15 min.)
.25 oz. Tettnanger (whole) (4.5% AA, 5 min.)
Yeast: WLP300 - Hefeweizen Ale Yeast, from 750ml starter.
Log: Primary fermentation 14 days @ 68F
Secondary fermentation 14 days @ 62F
Carbonation: 3.0 volumes Keg: 17.7 psi @ 40°F
