Wife's Wit

To fit the Weizenbock style more I should have used more wheat. There should be at least equal parts wheat and barley. I should also have used less bittering hops of perhaps a different variety.

OG: 1.074 FG: 1.021
Alcohol: 6.8% v/v (5.3% w/w)
Water: Boiled mash water and cooled to 135F for strike water
Grain: 9.00 lb. German Pilsner
4.50 lb. Flaked wheat
.5 lb. Melanoidin
.5 lb. Rice Hulls
Mash: 79% efficiency
Boil 6 gallons water and cool to 135F. Add water to grain in the mash/lauter tun. Protein rest @ 122F for 20 minutes. Raise temperature to 152F-158F for 60 min. Raise temperature to 170F and lauter. Batch sparge with 2.5 gallons boiling water, let stand 15 minutes and lauter. Collect 6.5 gallons wort for boiling (boil gravity 1.064). Boil 70 minutes adding hops as stated above, kettle volume reduced to 5.5 gallons. Cooled to 68F. Strained hops and collected 5.25 gallons wort. Pitched starter which brought the volume to 5.5 gallons with an OG 1.074.

Hops: 1 oz. Magnum (14.1% AA, 70 min.)
1 oz. Mt. Hood (5.1% AA, 15 min.)
1 oz. Mt. Hood (aroma)
Yeast: White Labs Hefeweizen Ale Yeast WPL P300
Starter made with 3c H2O and 1 lb wheat LME
Log: Primary for 5 days and rack to secondary, this was an unnecessary but I needed the ale pale. Secondary for 9 day for a total of 14 days. Sparkaloid added 4 days before bottling.
Carbonation: 2.5 gallons primed with 70g wildflower honey
2.5 gallons primed with 60g dextrose
