Monkey Wheat Ale

Clone of a local artisan beer from the Old Harbor Brewery in Old San Juan, Puerto Rico. My second shot at a custom recipe at the behest of my lovely wife.

Type: Extract w/grain Size: 5.5 gallons
Color:
4 HCU (~4 SRM)
Bitterness: 10 IBU
OG: 1.023 FG: 1.004
Alcohol: 2.5% v/v (1.9% w/w)
Water: None
Grain: 8 oz. American crystal 10L
4 oz. Rolled oats
8 oz. Banana Mash
4 oz. Raw barley
Steep: Steep all grains as the water comes to a boil. Remove brew pot from heat and let it stand for 20 minutes.
Boil: 60 minutes SG 1.032 4 gallons
8 oz. Light dry malt extract
1 lb. 8 oz. Wheat extract
4 oz. Brown sugar
Banana mash will be added in the last 5 minutes of the boil as will. Brown sugar will be added as with the extracts at the start of the boil.
Hops: .5 oz. Kent Goldings (5% AA, 60 min.)
.5 oz. Cascade (aroma)
Yeast: Good ale yeast; pitch at fermenting temp, 70°. Let it ferment for 10 days.
Log: Primary Fermentation will take 10 days. One week of bottle conditioning before it is "lagered" for one more week before it is consumed.
Carbonation: 2.3 volumes Corn Sugar: 4.33 oz. for 5.5 gallons @ 70°F
Since this beer will be slightly sweet and light in body, the co2 will be felt throughout. Cascades will add a certain citrus bite to contrast with the banana and wheat flavors.
Tasting: Light, crisp banana and wheat soft drink for adults.
