O Canada!
Pale ale in the summer reminds me of a summer long ago in Nova Scotia enjoying A. Keiths Pale Ale. Its been so long that I can't remember what it really tastes like, but here's a shot in the dark, based on an English pale ale-with American & British hops. Anyone who knows how to approximate Keiths, please post it!

Water: | For soft water add 2 tsp. gypsum and 1/2 tsp kosher salt. (My water is really soft) Otherwise, perhaps 1 tsp. gypsum, or whatever you usually do for English style ales (i.e. brown, bitters, etc.) | |||||||
Grain: | 1 lb. 0 oz. American 2-row 0 lb. 4 oz. American Vienna 0 lb. 8 oz. Dextrine malt (Cara-Pils) 0 lb. 4 oz. Flaked wheat |

Steep: | Crush grains & steep in one & a half gallons 150° water (w/ gypsum & salt) for 30 minutes. Sparge with 3/4 gallon 150° water. Bring water level in brew pot to 3 gallons. Bring to boil | |||||||
Boil: | 60 minutes | SG 1.095 | 3 gallons | |||||
3 lb. 5 oz. Light malt extract 3 lb. 0 oz. Light dry malt extract |

Remove from stove and add malt extract. Return to boil and follow hop schedule. After 45 minutes add 1 tsp. Irish moss with flavor hops,(first edition of Willamettes). | ||||||||
Hops: | 1.5 oz. Cascade (6% AA, 60 min.) .5 oz. Kent Goldings (5% AA, 45 min.) .5 oz. Kent Goldings (5% AA, 30 min.) .5 oz. Willamette (5% AA, 15 min.) .5 oz. Willamette (aroma) |

Yeast: | Your choice- stick with British or American Ale liquid yeast. I chose Wyeast 1335(British Ale II). Other good picks are Wyeast 1028, 1056, 1098, 1272 or 1275. Fool around. Use your experience. Watch out for excessive maltiness. I use a one quart starter. | |||||||
Log: | 7 days in primary @ ~70°; 10 days in secondary @ ~65°. Dry hopping not recommended for style. If that's not a problem, go for it!(fuggles, willamette, goldings) Bottle w/ 3/4 cup corn sugar. 10 days (warm)room temp. then down to the cellar with 'em. | |||||||
Tasting: | Clean, crisp, refreshing. Hop bitterness assertive but not overpowering. True to style, light on flavor and aroma hops. A bit malty in the finish. I might change yeast next time and see what happens. All in all a good summer pale ale. |
