Yeast: | Used Danstar London, 5g. sour mashed twelve hours prior with 1 oz Xlight DME. Added one tsp. Fermax to primary. | |||||||
Log: | Primary at 65 for eight days. Bottle aged for five weeks. | |||||||
Carbonation: | 2.0 volumes | Honey: 3.50 oz. for 5 gallons @ 70°F | ||||||
Added Honey one day before bottling. Presence of some carbonation forced air out of the top space in the bottles. | ||||||||
Tasting: | Very nice! Lots of tingly carbonation and good head from the flaked barley. |
