Pale #2

Pretty nice after a few weeks in the bottle

Beer: Pale #2 Style: English Pale Ale
Type: Extract w/grain Size: 5.5 gallons
Color:
9 HCU (~7 SRM)
Bitterness: 33 IBU
OG: 1.046 FG: 1.008
Alcohol: 4.9% v/v (3.8% w/w)
Water: 1/2 tsp gypsum
Grain: 3 oz. Carapils
6 oz. American crystal 20L
6 oz. German Munich
Steep: Steep in 3 qts at 155 for 30 min
Sparge with 3 qts at 175
Boil: 60 minutes SG 1.056 4.5 gallons
3.3 lb. Light malt extract
3.3 lb. Extra-Light Malt Extraxt
Start Boil at ~4 gallons (including 6 qts of water from grains)
1 tsp Irish moss at 30 min
Hops: .5 oz. Cluster (8.5% AA, 60 min.)
.5 oz. Fuggles (4.1% AA, 45 min.)
.5 oz. Cascade (5.5% AA, 30 min.)
.5 oz. Fuggles (4.1% AA, 30 min.)
.5 oz. Cascade (5.5% AA, 15 min.)
.5 oz. Fuggles (aroma)
Yeast: 1275 Thames River in 3 pint starter
Log: Boiled down to ~3 gallons.
Cooled in sink with ice water around pan until~110F.
Added cold(40F), filtered water to final volume of 5.5 gallons.
Final Temp after water add: 72F
Primary temp ~68F
Dry hop in secondary for 1 week with 1/2oz fuggles (plug)
Add isinglass 3 days before bottling
Carbonation: Bottle with 5/8 cup corn sugar
Tasting: A little fruity, but tastes good after a few weeks of cellaring.
Would ferment cooler(~65F) next time to get less esters (fruit).
Also, dry hop with more hops (1 oz) for longer (2 weeks) to improvehop flavor.
Consider adding some East Kent Goldings instead of fuggles.
Ya, Ya, Ya... perfection to a good bitter/pale (not quite Special or a full Pale ale).
