I infusion mashed the 11lbs. total grain with 3 gallons of treated water at 155°F for 90 minutes. Checked for conversion at 60 minutes, it wasn't complete waited 15 minutes more for full conversion. |

Added 1 tsp isinglass finings disolved in 1 cup of cool filtered (Brita) water at bottling |

Hops: | 2 oz. kent goldings (5.6% AA, 60 min.) 1 oz. kent goldings (5.6% AA, 30 min.) 1 oz. kent goldings (aroma) |

Yeast: | Wyeast 1056 without a starter, it lasted 10 days unrefrigerated while shipped during the UPS strike. It swelled after 48 hours. Given the manufacture date (2 months old at smack time) it was no worse for wear. |

Log: | Brew date was 22 Aug 97 bottled on 29 Aug 97, fermentation temp 70°F. | |||||||
Carbonation: | Primed with 1 cup corn sugar disolved in 1 cup filtered water | |||||||
Tasting: | Suitable bitterness for the style. Next time I'll use a starter and aerate more than 5 minutes of sloshing. |
