Little Dragon ESB

This all-grain recipe is a great version of a traditional ESB. The brewmaster from Mt. Shasta Brewing company has brewed 450 gallons of it in honor of this recipe.

Color:
15 HCU (~9 SRM)
Bitterness: 21 IBU
OG: 1.058 FG: 1.014
Alcohol: 5.7% v/v (4.5% w/w)
Water: relatively soft water to start - added 1 tsp gypsum and 1 tsp epsom salts
Grain: 3 lb. American 2-row
5 lb. British pale
1 lb. Belgian biscuit
8 oz. Belgian CaraMunich
1 lb. Flaked barley
Mash: 83% efficiency
10.5 lbs grain with 3.75 gallons water for 75 minutes mash at 151, mash out at 170 for 10 minutes sparge with about 4.5 gallons to collect about 5.5 - 6 gallons of wort.
Boil: 90 minutes SG 1.046 7 gallons
1 tbsp Irish Moss last 10 minutes
Hops: .5 oz. Fuggles (4.9% AA, 60 min.)
.5 oz. Kent Goldings (4.5% AA, 60 min.)
.5 oz. Fuggles (4.9% AA, 10 min.)
.5 oz. Kent Goldings (4.5% AA, 10 min.)
Yeast: Wyeast Thames Valley - pitched at 72
Log: Brewed on October 7, 2009
Primary for 6 days and secondary for 14 days. Took a long time to fully carbonate, about 6 weeks, forms a thin, creamy head that never goes over 1/2"
Carbonation: 2/3 cup priming sugar for 1.8 volumes of CO2
Tasting: This is a traditional ESB which is not, in fact, bitter at all. It has little head and a slightly malty flavor. It drinks smooth and easy - a real session beer similar in ways to Bass Ale.
