"Cure For What Ales You" Barleywine

Prepared on the eve of Sean's sinus surgery. I'm hoping to achieve somthing rich and luscious for ski season quaffing.

Bitterness: 49 IBU
OG: 1.136 FG: 1.028
Alcohol: 14.0% v/v (11.0% w/w)
Water: used bottled spring water - Amelia Springs (VA)
Grain: 1 lb. British pale
1 lb. British mild
1 lb. American crystal 60L
7 oz. Dextrine malt (Cara-Pils)
7 oz. British Peated Malt
Boil: 120 minutes SG 1.136 4 gallons
11.5 lb. Light dry malt extract
Added 3 oz. dried cherries in the last 10 minutes of the boil -- just to add a little extra flavor.
Hops: 1.82 oz. Cascade (6% AA, 60 min.)
0.91 oz. Hallertauer (4.5% AA, 60 min.)
0.91 oz. Challenger (5.7% AA, 60 min.)
0.91 oz. Cascade (6% AA, 30 min.)
0.91 oz. Hallertauer (4.5% AA, 30 min.)
1 oz. Challenger (aroma)
Yeast: WYeast Scottish Ale Yeast - 2 packages
Carbonation: 1.8 volumes Corn Sugar: 2.13 oz. for 4 gallons @ 72°F
