Alcohol: 25.7% v/v (20.2% w/w)
Grain: 2.0 lb. Belgian biscuit
Steep: Steep biscuit malt for 30 minutes @ 160.
Boil: 60 minutes SG 1.172 4 gallons
12 lb. Extra Light malt extract
3 lb. Honey
3 lb. Maple syrup
3 oz. Tettnagner @ 60 min.
6 oz. Hallertauer @ 30 min.
Irish Moss @ 15 min.
Honey and Maple syrup @ 10 min.
Hops: 3 oz. Tettnanger (4.5% AA, 60 min.)
6 oz. Hallertauer (4.25% AA, 30 min.)
Yeast: Use three vials of WLP099 Super High Gravity Yeast, pitch one for each batch.
Aerate for 1o minutes with oxygen.
Add 3 crushed BEANO tablets when pitching yeast for each batch (total of 9).
Log: Graduated fermentation:
Divide extract and hops into thirds. Make three 1 gallon worts on three consecutive weekends. Include biscuit malt in first batch. Use BEANO in each batch.
