Alcohol: 9.7% v/v (7.6% w/w)
Water: Brita filtered well water
Grain: 8 oz. American chocolate
8 oz. American black patent
Steep: Grains steeped 30 minutes at 155°f in 2 qts water.
Boil: 60 minutes SG 1.079 6 gallons
8 lb. Light dry malt extract
3 lb. Wheat extract
Hops: 1 oz. Galena (13% AA, 60 min.)
1 oz. Brewers Gold (8.5% AA, 30 min.)
1 oz. Chinook (12% AA, 30 min.)
1 oz. Brewers Gold (8.5% AA, 15 min.)
Yeast: Pitched directly onto yeast cake from pale ale
Log: Brewed 01/01/2007, scheduled to be transfered to secondary after 3 weeks, then 3 months in secondary, and 3 months to bottle condition before weekly tastings begin.
Carbonation: 4oz. corn sugar
