Water: 2tsp. gypsum in tap water
Grain: 3 lb. Toasted British pale
15 lb. British pale
2 lb. British Munich
1 lb. Dextrine malt (Cara-Pils)
1 lb. British crystal 70-80L
8 oz. Flaked barley
Mash: 68% efficiency
Mash in at 150° for 60 minutes Sparge at 170°
Boil: 90 minutes SG 1.076 7.5 gallons
Irish Moss @ 15 to in the boil
Hops: 1.0 oz. Fuggles (4.75% AA, 60 min.)
2.0 oz. Kent Goldings (5% AA, 45 min.)
2.0 oz. Fuggles (4.75% AA, 30 min.)
1 oz. Fuggles (4.75% AA, 15 min.)
2.0 oz. Kent Goldings (5% AA, 15 min.)
1.0 oz. Fuggles (aroma)
2.0 oz. Kent Goldings (aroma)
Yeast: WLP007 Dry English Ale Yeast
Clean, highly flocculent, and highly attenuative yeast. This yeast is similar to WLP002 in flavor profile, but is 10% more attenuative. This eliminates the residual sweetness, and makes the yeast well suited for high gravity ales. It is also reaches terminal gravity quickly. 80% attenuation will be reached even with 10% ABV beers.

Optimum fermentation temperature: 65-70°F
