ClYDE

This continues with my line of beers named for dogs. Clyde was my friend's bulldog who recently passed away. I am brewing my first barley wine. I hope it packs the same wallop as he did when he bumped into you. A big hit in a small packagae.

Type: Extract w/grain Size: 3 gallons
Color:
36 HCU (~17 SRM)
Bitterness: 138 IBU
OG: 1.102 FG: 1.030
Alcohol: 9.3% v/v (7.3% w/w)
Water: Put water out the night before to dissipate any chemicals. Used tap water with no water treatment. 1 gallon for the grain mash. 1 gallon for the sparge water. 2.5 gallons for the boil.
Grain: 1 lb. American crystal 60L
8 oz. Dextrine malt (Cara-Pils)
Steep: Grains in bag in 1 gallon. This and sparge gallon brought up to 150 F, then put in oven for an hour to hold temp at 150.
Boil: 60 minutes SG 1.077 4 gallons
7.75 lb. Light malt extract
Irish moss - 1/4 tsp at 15 minutes. With extract and grains sparged the initial boil was exactly 4 gallons. It was just over 3 gallons at the end of the boil.
Hops: 1 oz. Chinook (11.1% AA, 60 min.)
1 oz. Nugget (11.2% AA, 45 min.)
1 oz. Northern Brewer (8.1% AA, 30 min.)
1 oz. Perle (aroma)
Yeast: White Labs WLP001 - put in 600 ml yeast start about 36 hours prior to pitching
Log: This is going to be huge.
Carbonation: Keg - CO2 Carbonation
