A festively spiced winter wassail, brewed for Christmas with the whole family at my moms house.

Mash: | 75% efficiency | |||||||
60 minutes at 152°F. Pull a 1 gallon decoction and add to 1 gallon boiling water, reintroduce to mash to mash out at 160°F. Sparge with 170° water to collect 7.5 gallons in brew pot. | ||||||||

12 oz. Brown sugar 12 oz. Honey 12 oz. Molasses |

Add honey, molasses, brown sugar and the following spices just before flame out: 3 cinnamon sticks 1/2 tsp ground ginger 1/4 cup pure vanilla extract |

Log: | Ferment 14 days at 65° F. Cold crash for two days at 40° F. Keg, and force carbonate. Serve immediately. |
