Evil Genius Ale (Arrogant Bastard Clone)

A recipe I modified very slightly from one I found by Ron Hudson at www.tastybrew.com.

Beer: Evil Genius Ale (Arrogant Bastard Clone) Style: Strong Ale
Type: All grain Size: 5 gallons
Color:
35 HCU (~17 SRM)
Bitterness: 87 IBU
OG: 1.071 FG: 1.015
Alcohol: 7.3% v/v (5.7% w/w)
Water: I use spring water to brew, because the water in Pleasanton, CA sucks.
Grain: 11 lb. 8 oz. American 2-row
1 lb. 8 oz. British crystal 95-110L
Mash: 75% efficiency
Mash at 155 degrees for 60 minutes.
Use sparge water @ 185°F in sparger (5 gallon cooler) transfered into mash tun via 2 feet of tubing and through Phil's 7" rotating sparge arm.
Boil: 90 minutes SG 1.055 6.5 gallons
Irish Moss at 15 minutes.
Hops: 1.25 oz. Chinook (12.5% AA, 90 min.)
1.0 oz. Chinook (12.5% AA, 30 min.)
0.5 oz. Chinook (12.5% AA, 0 min.)
Yeast: Wyeast 1056XL liquid yeast.
Log: brewing on Feb 1, 2004 (Super Brew Sunday!). Ask me how it came out around the end of February.
Carbonation: 3/4 cup corn sugar boiled in a couple cups of water on bottling day.
