Midnight Porter
This is a pretty great porter. Light and clean. I wish it had more alcohol though. My OG was only 1.053 with a FG of 1.030. I must have screwed up something (like the reading).

Steep: | Put the grains in a grain bag and placed in pot while water was brought to a boil. Once it started to boil, I lowered the heat and steeped for 10 minutes. | |||||||
Boil: | 60 minutes | SG 1.203 | 1.5 gallons | |||||
4.5 lb. Amber malt extract 3.5 lb. Dark malt extract |

Removed grains and added the malt and boiling hop pellets. Boiled 60 minutes. Added Finishing hop pellets for final 5 minutes. | ||||||||
Hops: | 2 oz. Northern Brewer (8.5% AA, 60 min.) 1 oz. Tettnanger (4.5% AA, 5 min.) |

Yeast: | Cooled to 78 degrees and pitched White labs British Ale Yeast #WLP005 | |||||||
Log: | No fermentation activity for initial 12 hours but was really going after 24. Let ferment for 10 days. This could probally be reduced to 7 days. | |||||||
Carbonation: | Boiled 1 quart of water and 1 1/4 cups of light dried malt extract. Added to beer and bottled. | |||||||
Tasting: | I cheated and opened a bottle after 7 days. No carbonation but it was very good! I had it side by side with a Stone 6th Anniversary Porter and other than the Stone being carbonated, it was hard to tell the difference. |
