Step mash in kettle: 30 min at 122°, 20 minutes starting at 158° and dropping down to 150°. | ||||||||

LME added with only 5 minutes left in boil so as to keep temperature lower and increase bitterness extraction. The IBUs should therefore be around 30. Cascade added at flame out, then siphoned out when racking to carboy. | ||||||||

Log: | Brewed on 6/15/05. Pitched at high temperature because of impatience, probably around 95°. Started bubbling 12 hours later though. | |||||||
Tasting: | This beer is fantastic. Great roasted taste and slight hop aroma, just like a porter should have. Wouldn't change a thing. As it aged, mellowed out and lost the roasted taste that made it so good in the first place. |
