Queen Bee Royal Honey Porter

Trying to compensate for Boston heat, I'm using the English Ale yeast for low esters/fusel oils, the smell off the secondary is almost Belgian-funky.

119 HCU (~40 SRM)
Bitterness: 20 IBU
OG: 1.058 FG: 1.020
Alcohol: 4.9% v/v (3.9% w/w)
Grain: 1 lb. American crystal 40L
.5 lb. American black patent
.5 lb. British chocolate
Steep: 20 Minutes @ 120-130F
10 Minutes @ 150-156F
10 Minutes @ 170-176F
Sparged with 2 gallons @170
Boil: 60 minutes SG 1.048 6 gallons
3.3 lb. Light malt extract
2 lb. Amber dry malt extract
20 oz. Honey
1 tsp Irish moss @5 minutes
Hops: 1 oz. Willamette (5% AA, 45 min.)
.5 oz. Willamette (5% AA, 15 min.)
Yeast: WL-007 English Ales
Log: 80 degrees on the first day of fermentation, got it down to 75 for the next six before racking to a carboy.
7 days in the carboy before bottling, temperature high 70s.
Carbonation: 2.1 volumes Honey: 4.15 oz. for 5 gallons @ 80°F
