Water: Used a very hard tap water (Springville, UT)
1/2 tsp buffer 5.2 in HLT
Grain: 4 lb. British pale
8 oz. Belgian biscuit
8 oz. British brown
4 oz. American crystal 10L
8 oz. American crystal 60L
1 lb. Dextrine malt (Cara-Pils)
4 oz. Roasted barley
4 oz. Oats Malt
Mash: 65% efficiency
Single Infusion, Full Body, Batch Sparge
Mash in with 8.75 qts at 171°, 45 min at 158°
Boil: 60 minutes SG 1.076 4 gallons
2 lb. Honey
1 lb. Molasses
1 tsp irish moss
Hops: 1 oz. Challeger (7.5% AA, 60 min.)
.5 oz. Brambling Cross (6% AA, 30 min.)
Yeast: Dry English Ale White Labs #WLP007
Log: one month in Primary at 65°
4 mos in secondary at 65°
Carbonation: Forced Carbonation
35° 2.3 vols @ 7.5 psi
Tasting: This beer was awesome! The flavor contibution of the molasses almost made this an Old Ale. Don't drive even after just sniffing aroma!
