This is a minor alteration of a previous recipe produced with fantastic results.

Steep: | Steep grains for approximately 15-20 minutes while bringing wort water to 170°F. | |||||||
Boil: | 60 minutes | SG 1.163 | 2 gallons | |||||
8 lb. Light malt extract | ||||||||
Add one whole vanilla bean to wort for entire boil. At completion of boil, cool wort quickly. Remove boiled vanilla bean while straining wort into fermenter. | ||||||||
Hops: | 3 oz. Kent Goldings (5% AA, 60 min.) 1 oz. Saaz (3.75% AA, 30 min.) 1 oz. Fuggles (4.75% AA, 15 min.) |

Yeast: | Pitch one pkg WLP004 Irish Ale Yeat at 74°F. Also, add one fresh whole vanilla bean to primary fermentation. |

Log: | Brewed on 28 Aug 99. Racked to secondary fermentation on 3 Sep 99. Bottled 11 Sep 99. |

Carbonation: | 2.5 volumes | Corn Sugar: 4.60 oz. for 5 gallons @ 74°F | ||||||
Prime with 3/4 cup corn sugar. | ||||||||
Tasting: | Drank first bottle 2 Oct 99; tasted great. Trying to be patient and hold out for more aging. This is a good stout. Vanilla beans had no detectable flavor or aromatic effect. |
