This version of this Guiness look-a-like has a variety of grains.

0.14 lb. British chocolate
.18 lb. Roasted barley
.14 lb. Rolled oats
.14 lb. Corn (raw)
.14 lb. Rice (raw)
.14 lb. Rye (raw)
.14 lb. Raw wheat
Mash: 50% efficiency
Place the crushed crystal malt, chocolate malt, roasted barley, rolled oats, raw corn, raw rice, raw rye, raw wheat in water and steep for 155° for 30 minutes.
Boil: 60 minutes SG 1.037 7.5 gallons
6.77 lb. Dark malt extract
Add dark malt extract, 24 oz of soured stout, malto-dextrin, and Kent Goldings hops.

To make sour stout, pour the stout in a sanitized vessel. Cover w/ a cheesecloth and secure with a rubber band. Leave it in a dark place at room temperature for 2 to 3 days.

Hops: 2 oz. Kent Goldings (5% AA, 60 min.)
Yeast: Add Irish ale yeast.
Log: Ferment for 10 to 14 days. Using dry malt extract. Age in bottle for 10 days.
Carbonation: 2.0 volumes Dried Malt Extract: 5.07 oz. for 5 gallons @ 65°F
