Cherry Stout

I make this every year for x-mas gifts and it is much anticipated by all who get some. I add cherry flavoring after fermentation. I've used cherries in the boil as well in the past; they both work fine. For those of you who like more balance, you might want to add more hops and shoot for a higher finnished gravity. I use Amarillo(8.9) rather than bullion, they just didn't list them on the site. Enjoy!

Alcohol: 9.4% v/v (7.4% w/w)
Grain: 15 lb. American 2-row
10 lb. American victory
2.5 lb. American chocolate
2.5 lb. American black patent
Mash: 80% efficiency
Single-step infusion. Mash in approx. 158°F. I use 1 1/4quarts mash water per # of grain.
Boil: 60 minutes SG 1.076 11 gallons
Hops: 3 oz. Bullion (8.9% AA, 60 min.)
2 oz. Cascade (6% AA, 10 min.)
1 oz. Bullion (aroma)
Yeast: Wyeast 1332
Carbonation: 1.6 volumes Keg: 4.3 psi @ 45°F
Corn Sugar: 2.05 oz. for 5 gallons @ 70°F
Tasting: Serve at about 55-60 degreesF.
