Mash: | 80% efficiency | |||||||
Mash at 153F for 1 hour. Pull 1 gallon decoction and add to 1 gallon boiling water. When decoction boils, reintroduce to mash. Continuous sparge with 170F water to collect 6.5 gallons in brewpot. | ||||||||
Boil: | 60 minutes | SG 1.041 | 6.5 gallons | |||||
1 week prior to brewing, leave 2 pints Guinness out in a loosely covered bowl to sour, then freeze. While boiling, heat the soured stout to 180F for 20 minutes to pasteurize. Then add the soured stout to the brewpot at flameout. | ||||||||

Yeast: | White Labs 004 in a 1 qt starter. | |||||||
Carbonation: | Keg and serve on 70% Nitrogen 30% CO2 blend. | |||||||
