Comet Tail Stout

A sweet stout along the lines of Watney's.

Type: All grain Size: 5.75 gallons
Color:
114 HCU (~38 SRM)
Bitterness: 26 IBU
OG: 1.048 FG: 1.014
Alcohol: 4.3% v/v (3.4% w/w)
Water: tsp Gypsum to mash water
Grain: 7.5 lb. British pale
8.0 oz. Belgian Special B
5 oz. British chocolate
12 oz. Roasted barley
1 lb. Raw wheat
Mash: 75% efficiency
Mash in with 3.25 gal water. Protein rest at 124F 30 min.. Mash at 154F for 60 min.. Mash out 170F 15 min.
Boil: 60 minutes SG 1.039 7 gallons
1.75oz Golding Kent at 60 min boil.
Hops: 1.75 oz. Kent Goldings (5% AA, 60 min.)
Yeast: 1 Liter wyeast 1084 start used
Log: Primary fermintation 5 day at 66 F
Secondary fermintation 10 days at 66 F
Total volume to bottle 688 oz beer
Add 1 pound lactose for the sweetness at bottling
Carbonation: 200gm DME amber for priming
