Red's Dream

This is my attempt at a red ale. Actually, it's my first attempt
at making my own recipe. It turned out fairly nice. I was shooting
for something subdued that would go with just about any meal, and
I think I succeded in that. The color could have been better, and
most brewers would have liked more hops-- but it's good none the less.
The taste is somewhat like a Scottish Ale, but the spicyness of the
hops compliments the roasted flavor.

Beer: Red's Dream Style: American Amber Ale
Type: Extract w/grain Size: 5.5 gallons
Color:
22 HCU (~12 SRM)
Bitterness: 15 IBU
OG: 1.050 FG: 1.014
Alcohol: 4.6% v/v (3.6% w/w)
Water: Added some gypsum when steeping. Can't remember how much I used.
Grain: 1 lb. American crystal 20L
2 oz. Roasted barley
Steep: Steeped 30 min at 155° F.
Boil: 60 minutes SG 1.091 3 gallons
7 lb. Light malt extract
Added Irish Moss for last 15 minutes.
Hops: 1 oz. Cascade (6.5% AA, 45 min.)
1 oz. Kent Goldings (4.5% AA, 10 min.)
.5 oz. Cascade (aroma)
.5 oz. Kent Goldings (aroma)
Yeast: Wyeast Irish Ale yeast (I used a smack pack stepped up in a 1 pint
starter).
Log: Pitched yeast at 76° F. Very active fermentation 6 hours later.
Racked to 2ndary after 1 week. Bottled after another 2 weeks.
Carbonation: 3/4 cup corn sugar.
Tasting: Nice taste. Not very bitter (perfect for everyday drinking by those
who don't drink every day). Color is redish-brown.
I think that using extra light dry extract rather than light syrup
would give it a clearer red color. The roasted flavor changes
a lot with age-- sometimes stronger and sometimes weaker.
