Dog Daze Pale Ale
Wanted a summer beer with a little more oomph than a blond or a wheat, but still could drink a couple when its 95° with 100% humidity. The Caravienna gave the beer a nice reddish/orange hue (more color than the Recipator indicates). Using 3 Northwest hop varities (other than Cascade) to give it some complexity. Name came from the fact that it was brewed in the middle of Dog Days.

Add 8 oz honey at beginning of boil. 1/2 tsp Irish Moss with 15 min. to go. |

Yeast: | Used WL001 California Ale stepped up to a 1 pint starter. Pitch at 75°. Move to 68°, primary fermentation for 5 days then rack to secondary. Secondary fermentation for 6 days @ 68°. | |||||||
Log: | Gotta love those yeast starters - SP dropped to 1.011 at racking! Final gravity at bottling 1.009. | |||||||
Carbonation: | 2.5 volumes | Corn Sugar: 4.40 oz. for 5 gallons @ 68°F | ||||||
Tasting: | Nice hop flavor and aroma with enough bitterness to keep it interesting. Next batch may bump up the pale malts to get the OG to around 1.048 and higher conversion rest temp to get a little more maltiness, but still a great success! |
