Vacation Amber

This is my best amber to date. Beautiful color, head retention,
flavor and crystal clear. I will definitely brew this one again!

Beer: Vacation Amber Style: American Amber Ale
Type: Extract w/grain Size: 5.5 gallons
Color:
20 HCU (~12 SRM)
Bitterness: 39 IBU
OG: 1.055 FG: 1.015
Alcohol: 5.1% v/v (4.0% w/w)
Water: none
Grain: 8 oz. British Munich
4 oz. American victory
8 oz. Dextrine malt (Cara-Pils)
Steep: Put all grains into a muslin bag and placed in the pot of water. Applied
heat and just before the start of the boil, removed heat, covered and
steeped for 20 minutes. Sparged with about 1/2 gallon of very hot water.
Boil: 60 minutes SG 1.080 3.75 gallons
4 lb. Light malt extract
3 lb. Amber dry malt extract
Added 1 tsp. of Irish Moss 15 minutes prior to the end of the boil.
Hops: 1 oz. Chinook (9.2% AA, 60 min.)
.5 oz. Cascade (5.4% AA, 30 min.)
.5 oz. Cascade (5.4% AA, 15 min.)
.5 oz. Chinook (9.2% AA, 15 min.)
1 oz. Cascade (aroma)
.5 oz. Chinook (aroma)
Yeast: Used Wyeast European yeast
Log: Start 5/28
primary fermentation: 8 days
secondary: 14 days (could have bottled sooner)
bottle condition for about 4 weeks
Carbonation: Used 3/4 cup light brown sugar to prime.
Tasting: Oh my! What an excellent beer! It was great after 4 weeks in the bottle.
It's spectacular now at about 6 weeks. DELICIOUS!!!!
