Alcohol: 4.8% v/v (3.8% w/w)
Water: Fivestar 5.2 and crushed campden tablets in all brewing water.
Grain: 18 lb. German Pilsner
2 lb. Wheat malt
Mash: 65% efficiency
Single infusion mash at 151F, recirc for 60 minutes. Mashout at 170F - drain completely. Refill with 170F water and recirc for 5 minutes. Drain. Topped off with 1 gallon for 11 total.
Boil: 60 minutes SG 1.045 11 gallons
Rehydrated irish moss 10 minutes before flameout.
Hops: 1 oz. Hersbrucher (2.4% AA, 60 min.)
1 oz. Sterling (6% AA, 60 min.)
.5 oz. Argentine Cascade (3.2% AA, 15 min.)
.5 oz. Argentine Cascade (aroma)
.1 oz. Homegrown Cascade (aroma)
Yeast: Safale US-05
