Emma's Amber

This is a great session brew that I named after my daughter.

Beer: Emma's Amber Style: American Amber Ale
Type: Extract w/grain Size: 5.0 gallons
Color:
19 HCU (~11 SRM)
Bitterness: 28 IBU
OG: 1.061 FG: 1.010
Alcohol: 6.6% v/v (5.2% w/w)
Water: I buy Spring Water, but if you normally use your tap-water, no problem.
Grain: 0 lb. 8 oz. Crystal 40
0 lb. 8 oz. Carapils
Steep: Specialty Grains are steeped at 150° for 30 minutes.
I use a mesh grain bag, but it is not mandatory.
Boil: 60 minutes SG 1.123 2.5 gallons
3 lb. 0 oz. Light dry malt extract
3 lb. 0 oz. Amber dry malt extract
1 lb. 0 oz. Corn sugar
1 tsp. Irish Moss at last 15 minutes.
Hops: 1.5 oz. Cluster (7% AA, 60 min.)
.5 oz. Cluster (7% AA, 30 min.)
1 oz. Willamette (5% AA, 15 min.)
Yeast: White Labs WLP001 with a 16oz. starter.
Log: Primary Fermentation for 3 weeks at 65-70°.
Racking to secondary is not required.
Carbonation: Keg or bottle as you normally would. I bottle condition with 5 oz. priming sugar (dextrose) for approximately 3 weeks.
Tasting: Obviously this is not a competition brew, but it is a great beer while hanging out with friends.
