Strawberry Cream Ale

A VERY Berry beer. Women love it. Almost like a wine cooler, but better cause it's beer.

Beer: Strawberry Cream Ale Style: Cream Ale
Type: Extract w/grain Size: 5 gallons
Color:
8 HCU (~6 SRM)
Bitterness: 29 IBU
OG: 1.055 FG: 1.016
Alcohol: 5.1% v/v (4.0% w/w)
Water: Tap water, 1 T gypsum
Grain: 3 oz. Belgian biscuit
9 oz. American crystal 10L
Steep: Steep in 2 gal water. Put in cold heat water to 156 and maintain 30 min. Rinse grains with 1 gallon 150 water.
Boil: 60 minutes SG 1.092 3 gallons
4 lb. Light malt extract
1 lb. Light dry malt extract
2 lb. 2 oz. Rice extract
Hops: .5 oz. Galena (13% AA, 60 min.)
1 oz. Mt. Hood (4.5% AA, 60 min.)
Yeast: WYeast European Ale # 1338 stepped up in a 1 pint starter
Log: I put 5 pounds of frozen and quarted strawberries in the secondary,(primary 8 days) after heating them to 160 in 1 pint water.

Use a pectine enzyme if worried abour chill haze.
Carbonation: 5 oz. corn sugar
Tasting: Very berry. Good refreshing brew. Pink rocky head that sticks to the sides all the way down the glass. This was my first (actual) fruit beer (have used fruit extracts), and usually like a more subtle flavor. It may mellow some with age. Good red color. I like it and will probably brew it again next strawberry season. (It helps to have your own patch)
