High Seas Caribbean Ale
My initial attempt to make a Mexican type cerveza for my wife. For my wife's taste, a little too much hop flavor and aroma and not enough carbonation. Will try again.

Water: | Instead of using 3 gallons of water, used 3 gallons of leftover flat Sprite from a party. The corn sugar listed in the recipe can be omitted if Sprite is used instead of water. Lemon/Lime flavor of Sprite added nicely to the overall flavor of the beer. | |||||||

Log: | Time in primary fermenter was 3 weeks @ 75F. Did not rack into secondary. Racked into bottling bucket, added heaping 1/2 cup priming corn sugar with a small amount of yeast for bottling. | |||||||
Carbonation: | Naturally carbonated nicely using heaping 1/2 cup sugar. | |||||||
Tasting: | High hop flavor. Will adjust to lower hoppiness by reducing the amount of finishing and aromatic hops. |
